For the topping: 1 ½ glass of natural Bahia orange juice; 1 cup of sugar; 1 level tablespoon of cornstarch; 3 tablespoons of Bahia orange zest. Preparation method: In a container, beat the 4 egg whites until they are very firm and set aside. In another container, add the whole egg, the 4 egg yolks, margarine and sugar. Mix well until you obtain a light and homogeneous cream. Add the milk and wheat flour to this cream, beating until the dough is smooth. Add the fine Bahia orange zest and mix. Gently fold in the reserved egg whites and, lastly, add the baking powder, stirring from bottom to top. Pour the dough into a "pool" cake pan (with the cavity in the center) greased with margarine and sprinkled with wheat flour. If you don't have this specific shape, you can use a common mold (round, with a hole in the middle or rectangular) and just pour all the syrup over the cake once it's ready. Bake in a preheated oven at 200º for 30 to 40 minutes, or until the cake is golden and firm. Let it cool before unmolding. In a pan, add the orange juice (reserve just a little to dissolve the starch), the sugar and the thickest orange zest. Dissolve the cornstarch in the reserved juice and pour into the pan. Cook over medium heat, stirring constantly, until the syrup thickens. Let it cool before pouring it onto the cake. Unmold the cake and pour the orange frosting on top.
