Producer transforms backyard into experimentation space in AM Reproduction/Rede Amazônica In Borba, in the interior of Amazonas, an entrepreneur has attracted attention for combining the artisanal production of cachaça, the cultivation of exotic fruits and the breeding of pirarucu in the same space. The work is carried out in the backyard of the house, in the urban area of ??the city. The person responsible for the project is Régis Rocha, who uses cultivation, fermentation and fish management techniques to produce food and drinks adapted to the conditions of the Amazon region. Right at the entrance to the property, visitors will find grape vines, pomegranate trees and other species cultivated by the producer. According to Régis, the Amazon climate requires adaptations in plant management. ? Join the g1 AM channel on WhatsApp "The fruit from the south, which I brought here, is basically the grape. It has slightly different characteristics from there, because in the South the climates are well defined and not here. So it is always producing leaves, it is always producing grapes and nourishing the plant, because it never stops", he explained. Production of artisanal cachaça in the interior of Borba Artisanal production of cachaça One of the highlights of the property is the still where Régis produces artisanal cachaça. The process begins with the fermentation of sugar cane juice, a step that requires control of the amount of sugar present in the mixture. According to the producer, as the sugarcane grown in the region has a lower concentration of sucrose, it is necessary to adjust the sugar level to ensure efficient fermentation. "We work with Brix 17, which is the density of sugar to provide good fermentation. Here it is an anaerobic fermentation, without oxygen. The bacteria responsible for transforming sugar into alcohol do not like oxygen", he explained. Among the ingredients used is puxuri, an Amazonian plant known for its striking aroma and widely used in regional cuisine. Exotic fruits and pirarucu farming In addition to producing drinks, the entrepreneur also invests in growing fruits that are uncommon in the region, such as pomegranates. Another project developed at the site is pirarucu farming. To maintain the quality of the water in the tanks, Régis created a filtration system with simple materials found in the region. According to him, the structure uses broken bricks to replace more expensive materials normally used in biological filtration systems. "I actually use broken bricks. The water circulates all the time and passes through natural filters, maintaining quality for the fish," he said. The result, according to the producer, is a suitable environment for the animals to grow. "The arapaima we are raising today are around seven months old. The last one I weighed was 20 kilos," he said.
