Founded in 2023 by Gabriela La Porta, the cheese factory uses milk produced on its own farm and combines traditional Minas Gerais techniques with European influences. One of the award-winning cheeses, Ilha Segura Gran Noir, is produced using an Italian maturation technique and a recipe inspired by knowledge acquired from a producer in Rio Grande do Norte. "The cheese, despite being simple and fresh, stood out for its texture, buttery flavor and juiciness," said Gabriela. The producer explains that controlling maturation and salt helped to create a balanced product with its own identity. In Serra da Mantiqueira, in Andrelândia, the tradition of producing artisanal cheeses goes back generations at Fazenda Generosa.
