Preparation method The first step in preparing the "Salada do Farol" is assembling the cold ingredients. On a large plate, add the lettuce mix, arugula, cherry tomatoes, mango and cheese. Then, cut the cabbage leaf into thin slices and fry in olive oil. The ideal point is when the cabbage takes on a slightly darker color, becoming firm and crunchy. ???? Chef's tip: for a better result when frying, the chef advises that the cabbage leaf is well rolled and pressed before cutting, so that it is as thin as possible. The chef also recommends that after frying the cabbage rest on a paper towel to remove excess fat. After this step, add another drizzle of olive oil to the pan and add the fine herb butter. This mixture will serve as the base to prepare the shrimp, which must be previously seasoned with salt. With the frying pan well heated, add the shrimp and let the protein seal quickly. According to the chef, the ideal is to avoid cooking the shrimp in a cold pan, ensuring quick sealing to preserve the juiciness. To finish, prepare the sauce in a separate container by mixing the mustard, honey, olive oil and vinegar until you obtain a homogeneous mixture.
