The venture, which has been operating since 2015, began offering options for vegetarians, vegans, lactose intolerants, gluten intolerants and diabetics after identifying a growing demand for more inclusive gastronomic experiences. According to businesswoman Lilian Prinstrop, the traditional fondue sequence with cheeses, meats and chocolate has been part of the restaurant since its opening. Over the years, the team realized that customers with dietary restrictions had difficulty participating in the experience. ? "There was a difficulty in living the entire experience. The person had some à la carte options, but was unable to participate in all the stages of the sequence, which lasts an hour and a half, even two hours", says Lilian. Based on this diagnosis, the restaurant decided to create its own vegan fondue recipe. Then, the menu was expanded to other groups with restrictions. According to Lilian, demand was rapid after the launch of the vegan sequence, which has been on the menu for around six years. Today, audiences made up of vegans, intolerances and people with other dietary restrictions represent between 30% and 40% of the establishment's customers. "We managed to include everyone who wants to eat the fondue sequence", he says. The side dishes are also vegan, with soy meat, breads and vegetables, in addition to sweet varieties, with white and dark chocolate and vegan churros. The recipes were created in a partnership between the owner and the maître d', Andreia Matos. They are the only ones to carry out the preparation, respecting care with the handling of ingredients, natural fermentation techniques and the production itself, which takes place in a separate space and with exclusive utensils to avoid contamination.
