Chef Marta Peres explains that the recipe was developed in partnership with confectionery students and can be an alternative for those looking to start a business with regional sweets. Join the g1 AM channel on WhatsApp Ingredients 200 g of tucumã 100 ml of water 400 ml of condensed milk Semi-sweet chocolate bar White chocolate bar Method of preparation Blend the tucumã pulp in a blender until it forms a homogeneous paste. Cook over low heat with the condensed milk, stirring constantly. When it comes to a boil, add the white chocolate. It gives a ganache consistency without altering the flavor of the fruit. Cook until it reaches “readiness” and refrigerate. Meanwhile, grind the semi-sweet chocolate into small pieces and melt in a bain-marie, without letting it boil. With the melted chocolate, cover the bottom of the truffle molds about 2 cm thick. Then, fill it with the tucumã brigadeiro and finish with more chocolate to close the shell. “This is the tucumã truffle recipe, created together with our students, who learn chocolate techniques”, concludes Marta.
