Known for resembling a jewel, the cameo appeared at the fair in giant size and with an ambitious goal: to go down in history as the largest ever produced. The creation was presented during a workshop and mobilized a team from the National Commercial Learning Service (Senac) for more than five days. The initial expectation was to reach five kilos, but the scale showed almost 13 kilos. ? To transform the classic Pelotas sweet into a monumental version, it was necessary to multiply ingredients. Preparing the nut flour alone took around six hours of work. In the recipe, while a traditional cameo, weighing around 40 grams, contains six egg yolks, the giant version consumed 90. "We grated it so that it would have a concentration of fat, not release it into the sweet, because otherwise it would be oozing fat as we covered it with fondant", he explained. After preparing the dough, the sweet was covered in fondant made with more than two kilos of sugar. Book of records The choice of the sweet for the tribute was not by chance. "We wanted to pay homage to the city's confectioners. And is there anything better than being able to give a woman a piece of jewelry? The cameo was chosen exactly for that reason, as it refers to a piece of jewelry as a gift", comments Raquel. Now, the sweet giant can seek even greater recognition. The next step will be to try to officially record the feat in the record books. According to Senac's gastronomy coordinator, Bryan Chaplin, the team has already carried out research to verify the brand. "We did a lot of research, a whole search.
