With the return to school, one of the challenges of families' routines is finding new ideas to put together varied, practical and, at the same time, healthy lunch boxes. Investing in fresh and nutritious ingredients helps to diversify the menu and encourages the consumption of natural foods on a daily basis. The challenge, however, is still present, only 32.7% of Brazilian students consume fresh fruit on five or more days of the week, according to IBGE's National School Health Survey (PeNSE).

"Eating habits begin to be built at home and the child's participation makes all the difference. Taking the little ones to choose the ingredients, help with the preparation and try new flavors makes this process lighter and more natural. When healthy eating is presented in a fun way, the chances of it being part of the routine increase greatly", explains Priscila Gomes, nutritionist at Mundo Verde.

But after all, what can we make for a healthy and fun snack for children's lunchboxes?

Broccoli Fritter with Carrot and Cheese:

Ingredients:

200g chopped raw broccoli

1 egg

30g ricotta cream

80g grated carrot

100g grated light buttermilk

1 teaspoon Turmeric Mundo Verde

1 tablespoon of Chia Mundo Verde

Mundo Verde Pink Himalayan Salt – to taste

Seasonings to taste

Preparation method:

In a bowl, mix all the ingredients well until a uniform dough forms. Using a spoon, take small portions of the dough and shape the dumplings with your hands. Arrange the dumplings in the airfryer basket, leaving space between them. Air fry at 180°C for approximately 15 minutes, or until golden brown. Tip: if you want, turn the dumplings halfway through to brown evenly.

Vegetable savory muffins:

Ingredients:

1/2 grated zucchini

1/2 grated carrot

80g grated parmesan cheese

1 tomato chopped into cubes

1 red onion chopped into cubes

1 spoon of baking powder

Oregano

Preparation method:

In a bowl, place the zucchini, carrot, tomato and red onion. Beat an egg and add. Stir well and add the rest of the ingredients. Add the yeast and stir gently. Place in cupcake or silicone molds and bake in a medium oven for 30 minutes.

Sausage with Psyllium:

300g raw chicken fillet

1 clove of garlic or garlic powder

1 dessert spoon of paprika

1 dessert spoon of chimichurri

3 dessert spoons of chopped onion or onion powder

1 egg white

Place all ingredients in the processor or mixer. Beat well until a homogeneous and pasty dough forms. Let the mixture rest for approximately 5 minutes for the psyllium to hydrate and bind. Divide the dough and shape it into sausages. Wrap each unit in plastic wrap and seal the ends tightly. With the water already boiling, cook for about 10 minutes. Finally, remove from the water, wait for it to cool and unroll.

Integral Bisnaguinhas:

240ml vegetable drink

50gmelted butterghee

430g Mundo Verde gluten-free flour mix

10gdry biological yeast

1 whole egg + 1 yolk

1 egg yolk for brushing?

In a bowl, mix the vegetable drink, butterghee, whole egg, yolk and salt. Add the yeast, mix gently and let it rest for 20 minutes in a stuffy place. Gradually add the wholemeal flour, stirring constantly until it absorbs the liquid. When the dough starts to get heavier, transfer it to a greased or floured counter and knead. As the dough will be soft, grease your hands to make the process easier. Push and fold the dough until it becomes firmer and stops sticking. Cover with a cloth and let it rest for 10 minutes. Then knead for another 15 minutes, until the dough is smooth and elastic. Place it in a bowl, cover with plastic wrap and let it rise in a warm place for about 40 minutes, or until it doubles in size. Remove the air from the dough, shape it into a cylinder and divide it into equal portions.?Make each portion in the shape of a tube, place on a greased baking tray, brush with egg yolk and bake in the preheated oven until golden.

Burger:

120g tuna

30g Mundo Verde oat bran

5gdeChia Mundo Verde

1 teaspoon of sesame

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon of paprika

pepper taste

In a container, mix all the ingredients well until a homogeneous dough forms.?Shape 2 burgers into the desired size and then wrap in cling film and place in the freezer.?Place directly in a covered frying pan over low heat to defrost.?Then, grill with a drizzle of olive oil until golden on both sides.

For Priscila, there is no need to give up flavor to offer a more balanced snack.?"Small substitutions, such as including whole grains, fruits, seeds and natural ingredients, make recipes more nutritious and help provide energy so that children can enjoy the holidays with enthusiasm. The most important thing is that healthy eating is part of these moments in a light and pleasant way", concludes the nutritionist.
